MAPLE GLAZED ACORN SQUASH with GOAT CHEESE and HAZELNUTS
Ingredients
 
3 acorn squash
¼ cup real maple syrup
3 oz. unsalted butter diced
zest of one orange minced
1 tsp. kosher salt
1 tsp. fresh ground black pepper
¼ cp. Coarsely chopped fresh sage
4oz. fresh goat cheese
4oz. toasted hazelnuts lightly crushed
 

Directions

 
Cut Squash in half lengthwise. Remove seeds and slice each half into quarters. Place on a baking sheet and brush with maple syrup. Season with salt and pepper and distribute butter, orange zest and sage leaves evenly over the squash. Roast in a 350-degree oven for 40 minutes. Remove from oven and break the goat cheese in small pieces over the squash and sprinkle hazelnuts. Bake for another ten minutes to melt the cheese. Remove and serve.
