2007 Bollo

The 2006 Bollo tempts the palate with complex, layered aromas of tobacco, black cherry, sarsaparilla and smoke with meaty undertones and a glimpse of tapenade. In the mouth it shows a beautiful balance of acid and tannin that begs for food. Aged in oak casks for 3 years, this select allotment of nebbiolo has matured to produce a wine worthy of the finest Italian and Mediterranean meals. Don't be afraid to lay this one down in the cellar for a time; it is sure to continue to develop and mature as classic nebbiolos are known to do.
